My friend bought a set of these pans when she upgraded to an induction oven. I had admired them — the heft and pretty sage color — but I didn’t need any new cookware. But I kept thinking about this pan. Finally, I convinced my friend to loan me her smaller one for a month so I could decide for myself if I needed to buy one. Read on to find out if I decided to purchase a pan or set of pans or not.

Here’s why I love it. It is small enough to make a single omelet or grilled cheese (two items on rotation in a busy home with two teens), but when I spent over an hour trying to clean burnt egg and cheese on the bottom of a different brand, I decided to give Valencia Pro a try to see if it really lived up to the hype.

I scrambled two eggs, tossed in some homemade pesto and onions, turned up the heat on my ancient gas stove, and poured the food into the pan. Usually, when anyone cooks on our non-stick pans, the dishwasher of the day (often my husband) must soak and scrub to rid the pan of sticky cheese or egg residue, and then toss it in the dishwasher.

The cooking process was incredibly smooth; the ingredients seemed to cook evenly. When I went to flip the eggs, nothing stuck – not the cheese, not the egg, or anything at all – and it flipped over with ease.

When everything was done, the food slid onto the plate and it took me all of a minute to clean and rinse the pan to perfection. This is now dubbed in our household “the magic egg pan,” and we’d rather make a couple of eggs than a large scramble in another pan. I swear it made the food taste better, too, but perhaps I was just hungry. If you love to cook, want a pan with a lovely color (the sage is lovely) that’s not too heavy, yet provides even cooking and prevents sticking (we’ve made so far), this pan would be a great addition to your kitchen — especially if you love to cook but hate to clean.

In My Expert Opinion

I’m buying this pan because I love that it is made from non-toxic materials, evenly cooks my food, and leaves almost no residue to scrape off after cooking. The Valencia Pro GreenPan is lightweight, making it easy for my kids to use, and it is dishwasher safe. This eight-inch beauty cooks eggs and grilled cheese to perfection, which is honestly reason enough for me.

A bonus is that the sage green is such a pretty color; I don’t mind leaving it on the stove top. Plus, if we ever convert to an induction oven, these pans, unlike some others we own, are induction oven-ready. My friend felt these pans were a little pricey, but I think they are a fairly affordable option for safe, non-stick cookware.
